In order to complement the more vegetables 'lifestyle change', we decided to venture into the world of making your own 'healthy' salad dressings. It starts with a delicious dressing using Greek plain yogurt and you get to throw in cilantro (which we so far never know how to use all the cilantro we buy!).
Cilantro Lime Dressing:
(recipe modified from simplefoodhealthylife)
Ingredients:
- 1/3 cup olive oil
- 1/2 cup plain Greek yogurt
- Juice from 1/2 lime
- 1 tablespoon white vinegar
- 1 bunch fresh cilantro
- 1 garlic clove
- Salt to taste
- Place all ingredients in a blender; blend until smooth.
- Use as a dressing for salad, or really as a sauce for everything!
- Play around with the proportion of ingredients; when we make it, it turns out a little different each time, but always wonderful!
- Try regular plain yogurt.
- I use a Magic Bullet and it purees the cilantro and garlic wonderfully.
- Also, if the dressing is too thick, add a little more olive oil or I have also added milk to loosen it up!
