Cilantro Lime Dressing

My husband and I need to eat more vegetables.  So we thought that we would start by eating more salads.  Get a healthy dose of lettuce, add some tomatoes, cheese, carrots, and whatever vegetables we have in the refrigerator.  Make it a meal itself by adding meat, etc. 

In order to complement the more vegetables 'lifestyle change', we decided to venture into the world of making your own 'healthy' salad dressings.  It starts with a delicious dressing using Greek plain yogurt and you get to throw in cilantro (which we so far never know how to use all the cilantro we buy!).

Cilantro Lime Dressing:
(recipe modified from simplefoodhealthylife)

Ingredients:
  • 1/3 cup olive oil
  • 1/2 cup plain Greek yogurt
  • Juice from 1/2 lime
  • 1 tablespoon white vinegar
  • 1 bunch fresh cilantro
  • 1 garlic clove
  • Salt to taste
Directions:
  1. Place all ingredients in a blender; blend until smooth.
  2. Use as a dressing for salad, or really as a sauce for everything!
Notes:
  • Play around with the proportion of ingredients; when we make it, it turns out a little different each time, but always wonderful!
  • Try regular plain yogurt.
  • I use a Magic Bullet and it purees the cilantro and garlic wonderfully.
  • Also, if the dressing is too thick, add a little more olive oil or I have also added milk to loosen it up!
